Our Lamb Shouders are all expertly cut in our butchery on our farm. The connective tissues in the shoulder break down under slow, low temperature cooking to result in melt in the mouth, succulent meat. Cooking the shoulder on the bone allows more even heat distribution and helps retain moisture in the meat whilst it is cooking.
